Trying to move towards a raw or vegan diet? This is a simple sandwich you can make for lunch or eat as a snack anytime. It is quick to prepare and good to include in your arsenal of healthy recipes. I generally eat this with a raw Sunflower Seed and Onion Bread (pictured below), but for simplicity sake I am showing it with a 12 grain bread. You can also use your favorite gluten-free bread as well. What I like about this meal is that it is clean, lean and chocked full of vitamins, antioxidants, minerals and phytonutrients. This is a terrific transitional sandwich if your moving from the Standard American Diet (SAD) to a vegan lifestyle. This sandwich has a broad appeal I have found as it is ordered at my restaurant by people from all walks of life including meat eaters looking for a healthy option. Well, half of them add bacon to it but we won’t get into that.
So just toast your bread and layer the ingredients.
